Mexican Meatloaf in Slow Cooker

INGREDIENTS
  • 2 lbs Ground Beef
  • 2 cups Crushed Corn Chips
  • 1 cup Shredded Cheddar Cheese
  • 2/3 cup Salsa
  • 2 Eggs, beaten
  • 1/4 cup Taco Seasoning

DIRECTIONS
  • Combine all ingredients in large bowl
  • Mix well
  • Shape meat mixture into loaf and place in slow cooker.
  • Cover; cook on low 8 - 10 hours


TIP: To glase meatloaf, mix 1/2 cup ketchup, 2 tablespoons brown sugar and 1 teaspoon dry mustard. Spread over meatloaf. Cover and cook on high for 15 minutes.
